What is the excitement for kale and why are so many vegan and health freaks (like myself) so in to them?

Not only is kale high in fiber and water which help prevent constipation giving you a healthy digestive system (especially for dinner, morning toilet routine is great... probably too much information).

It also contains vitamins B and C which promotes iron absorption, essential for energy release.

I know a number of people complain about not having enough iron in there diet leading them to feel fatigue, however what good is iron, if your body doesn't have the vitamins to help break them down?

Eating 1 cups of raw kale is almost equivalent to eating 2 cups cooked because as you cook them, they wilt and are left with the same amount on your plate plus it makes them easier to digest.
